Chocolatier Daniel Cooper shares. He’s one of the few foodies of any type willing to share recipes. At the Gourmet Galaxy Cafe exhibition Cooper reveals his dark (and white) chocolate secrets.Cooper likes to talk chocolate. It all started when he was eight years old and spending time in his family’s Hilltop restaurant, the Biltmore.When he found out he could fit into his grandfather’s chef whites, he knew his future was in the culinary arts. When he was 19, the mold was set.

To become a chocolatier Cooper built his own “chocolate lab” in the basement. There, after years of study, he emerged a self-taught chocolatier.

` Pure Imagination has quickly become a chocolate destination. He has gained local fame for his truffles.

The small display candy shop is like a magnet to North Market passersby. And for good reason - a selection of 60 different truffles and 30 other confections from nut clusters to chocolate-covered potato chips.

Cooper has one career ambition. He intends to keep just one chocolate shop, to insure quality. He wants to oversee the entire chocolate making process. “That cannot be done with a staff...quality is a solitary calling.”

Mark it down: Pure Imagination will never become a chain.
