The Faculty Club, Ohio State University William Glover, Executive Chef At age 28 William Glover has one of the busiest, and, maybe, one of the most demanding food service jobs in Columbus. His kitchen crew of 15 prepare lunches, dinners and buffets for a main dining room seating 140 and, when booked, groups meeting in six private dining rooms. Chef Glover’s culinary domain is a busy private club with approximately 2,000 active members – 600 regulars. In club parlance, that means the chef has multiple bosses. The Faculty club dates back to 1938. Today’s membership is comprised of 40 percent OSU faculty, 5 percent support staff, 20 percent administrative, 15 percent alumni, and 20 percent made up with community leaders and business professionals. Chef Glover’s kitchen experience and food interest started at age 10 in his grandmother’s Pennsylvania restaurant. Dishwasher. Table buser. Line cook. “She put me where ever she needed me,” he recalls. She was his inspiration to become a chef. But the fine tuning started when he audited culinary courses at Columbus State. His first bump up the kitchen ladder came when he was upped to sous chef at Jefferson Country Club in Blacklick. He describes three years under New Albany Country Club executive chef Christopher Bee as “my real education… he refined my culinary skills.” Those skills will be put to the test this year. The Faculty Club has 120 special events on the books for 2005. His Gourmet Galaxy Café demonstration will be his grandmother’s recipe for chicken and puff pastry, a mix of chicken, cream cheese and roasted peppers. The Faculty Club 181 S.
