M - Just Plain M

Brian Hinshaw for five years has been one of the grand openers for Cameron Mitchell Restaurants. Earlier this 2005 he was elevated to oversee five of the CMR restaurants in Columbus – M being his most recent single assignment. M – Just Plain M, is the marquee culinary masterpiece for the city’s most successful entrepreneur when it comes to creating dining destinations. It is in a setting of sophistication, the ultimate dress-up restaurant in Columbus.

M has been on The Dispatch Top 10 fine dining list since opening.

Brian Hinshaw, a graduate of the Columbus State Community College’s culinary program, received the M as an assignment when it opened in 2001. While chef Hinshaw has the classroom background, he credits much of his career to the teachings of Certified Master Chef Hartmut Handke while at CSCC.

Before taking over M, Hinshaw’s learning tour took him into restaurants in California and Chicago. Since returning to Columbus, he has been a major part of the Mitchell organization. He opened Ocean Club, the classic seafood venue at Easton Town Center. In his new capacity, Hinshaw oversees the culinary planning and execution of not only M, but also Molly Woo’s, Columbus Brewing Co., Ocean Club and the CMR original, Cameron’s Worthington.
