The shop is new to Columbus and it is a brother and sister creation. Spencer Budros, a certified pastry chef, opened Pistachio in the Short North to service wholesale restaurant accounts. However, his display cases for retail trade give the shop social presence. On any given day he showcases as many as 50 different pastries. Do not expect Pistachio to offer donuts and Danish. Do expect Pistachio to offer items such as apple tarts with rosemary, caramel and bitter orange. In coming years the Pistachio desserts will flood the city. Possibly without dessert menu labels of origin they will dominate the restaurant market – and at weddings, corporate functions and banquets. All successful businesses, regardless of the product or service, must keep the money handling in check. Budros keeps his checks and balances in the family. Sister Anne Fletcher, with a business degree in economics from University of The South in Tennessee. “She’s the business brains,” is his anointment.
