06JUN06 Picture Perfect Products At Pistachio All on Premises That old nut about a picture being worth a thousand words has deeper meaning at Pistachio. Pastry master Spencer Budros creates; photographer Laura Steinmaus preserves for posterity. Well, at least she preserves a Budros product for as long as a digital image allows. Steinmaus, who has been in-house with Pistachio, a sweet kitchen, since it opened, runs the front of the shop and does all that great photography for the selly Website www.pistachiosweets.com. Glance at the Steinmaus digital creation. This month, June, Budros introduces his newest variety of confiture - a confection as his dessert of the month. Steinmaus grabs the fresh, ripe fruit color that is macerated in sugar and then gently cooked in it's own juice for up to four hours, achieving an excellent syrup consistency. Kahiki Co-founder Bill Sapp Update… The gent who paired with Lee Henry two generations ago to bring Columbus The Top, The Kahiki and Saxon's - the latter for roast beef before Arby's - is on the planning boards again. This time around he'll do it alone. Since he owns a small building at 2882 E. Main St., across the street from The Top, his menu will offer a roster of panini, that grilled jobbie otherwise known as a sandwich. Pa Pa Paninis will have a beer and wine permit and seat 32 inside, 16 on the patio in season. The spot most recently was the ill-fated Boston Soul. |

Updating Paul Liu's Empire… C. B. Findlay in her Short North Gazette food column once asked…"what will Paul Liu do next?" Street rumbles in recent weeks had Liu selling his top rated Haiku in the Short North. Not the case, Liu says. Matter of fact, Liu now owns the building and big parking lot. He bought the property a couple of years ago from Kyle Katz. More Liu update: He's busy getting nearby Liu Pon-Xi up to speed on the 670 Cap. Also, he still owns Bento Go-Go off campus. Neither is for sale. So, there. |

Food Editor's Kindness to Callers… Food editors and food writers are constantly bombarded with pitches for ink space in their newspapers. As a rule press agents and puff seekers get an abrupt, sometimes bitchy taped message when they call and the editor is out. Not so when calling Jane Snow, Akron Beacon Journal food editor. They are greeted with a sweet reassurance their message is welcome and instructions as to her office hours when she will be there to accept callers live and in person. Her tag line at the end goes something like this: "If you're calling about the press release you sent to me… it was wonderful." While Snow's pages are loaded with goodness and calories, her national fame came years ago when she was the first to write about the real meaning of Mobil stars as a rating system. In brief, Mobil inspectors do not eat the food.
