30MAY06 Handke's Winning Ways May Be Rubbing Off on Young Chefs Nine months ago culinary graduate student Meegan Roberts stepped into what may be the best-tuned graduate course of her career. She's a 2005 hospitality program graduate of Hocking College in Nelsonville, OH. Roberts is now in the high-volume kitchen at Handke's Cuisine. Working shoulder-to-shoulder with the nation's winningest competition chef, Hartmut Handke, has rewards. Handke's culinary trophies blanket one wall in his restaurant. He has a truckload stored in his Dublin home. Last week Roberts claimed one of her own. She won the 2006 recipe contest grand prize in the appetizer category awarded by the Peanut Advisory Board. Her winning recipe was for spicy peanut butter eggplant dip and a dessert of peanut ravioli with a blackberry coulis. Roberts has been a winner before. During her college career she was a member of the Hocking College's hot food team and competed successfully in the culinary world. Her internship was at St. Kitts in the West Indies. |

Rolling Rock Tap To Run Dry Like original Coors from Colorado spring waters, legit Rolling Rock is about to fade away into Budweiser's bulk world. Come the end of July, Latrobe, PA, will give up on making lagers that have a cult following throughout Columbus. Big Bud bought the Rock and a boycott is in the mix. Bud biggies plan to keep the Rock brand, the green bottle, label and, hopefully, the following. Bet on it. It won't survive. When Rock is brewed with water from the East River, goodbye. Bud moguls have announced they plan to move Rock brewing to New Jersey. The Pittsburgh Post-Gazette quoted a beer lover as saying, "If it's not from Latrobe, it's not Rolling Rock." A Vic Foreman Reminder… Recall this sage advice from Vic Foreman: Never eat anything from nations without inside plumbing. If you've shopped fish cases in major supermarkets recently, do a double take on origins of both fin and shellfish. Quick suggestion: Order only catfish raised in this hemisphere. Canada has good product. Catfish farms in the USA - acceptable. You may have to be your own judge. Seek sources. Damn few servers know what fish species they are serving, much less where is was caught. When it comes to ordering a shrimp dinner, you're really shooting crap. USA shrimp producers say importers are not held to the same health and safety regulations required of sources in this hemisphere. Officials here say most seafood shipments coming in from those Foreman countries are enhanced by antibiotics. One sure finfish to avoid: Orange Roughy. Anything tagged Orange Roughy in fish cases this month was caught and flash frozen last August. Don't blame the New Zealanders - blame Japanese trawlers. |
