columbuschefs.com Spagio... ![]() Hubert Seifert, chef/owner Spagio In the evolution of restaurants in Columbus, Hubert Seifert is a modern-day pioneer. For a hundred years the finer restaurants were clustered Downtown serving offices and lawmakers. All that changed in 1980 when chef Seifert and wife Helga arrived, two suitcases in hand. They would be the first to create a new dining area. We call them “restaurant clusters” today, all beyond Downtown’s Broad and High core. The city’s culinary scene started to change with the Seiferts’ arrival. The Seifert cluster is an elongated block in suburban Grandview Heights. There sat a fading strip of store fronts, circa 1935, known as the Bank Block. The Seiferts took a chance, opened what amounted to a European deli with chill cases of house made pate, smoked seafoods, caviar, pastries, and imported tins of European foods. In 1980 the place opened as Gourmet Market, intimate, artsy and sophisticated. Beyond the two suitcases, chef Seifert arrived with a resume detailing his learned culinary cultures from kitchen stints in 10 countries - as a chef in German embassies - Brazil, Mexico, Spain, Holland, France, Egypt, Russia, Switzerland. Gourmet Market reflected all. The concept may have been ahead of the Eighties era. He quickly retooled, tripled his space and kitchen, added a wine store, and changed the name to Spagio - “spa” related to heart healthy cuisine, “gio” for the menu’s worldly influences. Spagio today is noted for pasta dishes and true gourmet pizzas from a wood fired oven. Call it elegant. The 1935 Bank Block today is a cluster of eateries, fine dining venues, coffee shops, pastry shops, ethnic fare, and a neighborhood bar.
