Viewpoint, a Bistro


Restaurant professionals in the making run this establishment. Viewpoint is a food service laboratory for hospitality management students at the Ohio State University. It is open to the public, but caters heavily to students and faculty. The 100-seat restaurant provides a realistic working environment. Students in the fall, winter and spring quarters plan weekly themes, develop menus, cost out ingredients, discuss the décor and study the nuances of preparing restaurant food.

Chef instructor Jim Garrett is a classroom chef. His students are in the OSU Hospitality Management program. The courses serve as introductory internships where it counts – The dining room. Students open, operate and close each station in the restaurant. Overall intent of the course is to develop a management style.

Chef Garrett’s food career fits the mold to be teaching in a hospitality department of this major university. Like most chefs he started as a line cook in a busy restaurant. He holds certification in nutrition and human resources from the Columbus State culinary program. He audited courses at the Culinary Institute of America in Hyde Park, N.Y.

Viewpoint students plan weekly themes, cost out menus, and do the marketing and advertising. What the public sees is a conventional restaurant. A menu example for dinner: The 8 ounce rib eye steak, $11.95. Dinner check averages are between $18 and $25.
